At the Goshen Center for Cancer Care, we believe in the power of nutrition to support our patients’ health and well-being. That’s why our Integrative Care Team hosts Noontime Nosh, a monthly event designed to help our patients discover healthy eating habits that can prevent cancer, reduce treatment side effects and promote a healthier lifestyle.

What is Noontime Nosh?

Noontime Nosh is a unique event held once a month under the direction of our registered dieticians. During these sessions, patients have the opportunity to watch a healthy meal being prepared and taste the delicious recipes. Each month features a different cooking demonstration, showcasing foods with cancer-fighting benefits. Attendees not only get to sample these nutritious dishes but also receive the recipes to try at home.

This Month’s Feature: Healthy Breakfast Cookies

This month, we’re excited to share a recipe for Healthy Breakfast Cookies. These cookies are not only gluten-free, dairy-free and vegan, but they are also packed with antioxidants. They make a perfect breakfast, snack or anytime treat!

Ingredients:

  • 1 cup rolled oats
  • ½ cup almond flour
  • ¼ cup flaxseed meal
  • 1 tablespoon chia seeds
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup raisins
  • ½ cup unsweetened applesauce
  • 3 tablespoons melted coconut oil
  • 3 tablespoons maple syrup
  • 2 tablespoons soy milk

Instructions:

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix all dry ingredients (oats, flour, nuts, seeds, dried fruit, salt, cinnamon, baking powder) until combined.
  3. Add in the applesauce, coconut oil, maple syrup, and soy milk. Mix until a sticky batter is formed.
  4. Divide and roll the batter (about 1-2 tablespoons per cookie) into cookies (about 18 cookies).
  5. Bake in the oven for 18-20 minutes or until the edges are golden brown. Let the cookies cool for a few minutes before transferring to a cooling rack for 10 minutes. Store in the refrigerator or freezer and enjoy!

Notes:

  • You can substitute any sweetener of choice for the maple syrup.
  • Feel free to use any dried fruit in place of raisins.
  • Any nuts or seeds can be used instead of the ones listed.
  • Applesauce can be swapped out for mashed banana or pumpkin.
  • You can use your preferred milk in place of soy milk.
